Today is day two of the budget challenge. I’m still pretty tired, so it’s going to be a short one today. If I don’t get all rambly again at least.
I started this morning by baking this loaf of bread. I made the dough yesterday by mixing 3 cups of flour, 1 sixth of a yeast cube, a pinch of salt and a cup of water and kneading for a couple of minutes and let it rise overnight. This morning I put it on a baking sheet as soon as I turned the oven on, so it could rest for a bit and then baked it at 220ºC for about half an hour. This loaf served my partner for both breakfast and lunch.
While the loaf was in the oven I made myself some porridge with oats, leftover rice, soymilk which I made yesterday, sugar and cinnamon. The weather was lovely, so I ate outside on the balcony.
After breakfast I went out for some groceries. First I went to the Asian food shop, because they have the best and cheapest tofu. I also got some spices and herbs which I didn’t mean to, but god I missed them already. I never really appreciated how expensive herbs and spices are though, good grief. Anyway, I got black pepper, oregano, cumin and ginger. It’s still nothing compared to my usual array of spices and herbs, but at least I have some basics now along with the cinnamon, paprika and curry powder I bought on Saturday.
Then I went to the produce shop, where I also spent a bit more than planned. I got a bunch of carrots, a bag of onions, a cucumber, a box of mushrooms, a bunch of bananas and a bag of green beans which were half off and some lemons to make iced tea, because it’s surprisingly warm for the time of year. With lemons being 25 cents each and being able to make a liter of iced tea with half a lemon, one bag of tea and a bit of sugar it’s actually way cheaper than store bought iced tea or soda, it literally costs like 16 cents to make one liter of iced tea which costs a full euro in the shop, effing ridiculous. I was also hoping to find some old avocados for cheap, but no luck.
In total I spent €14.15 today, which leaves our budget at €18.05.
For dinner I made a one pot dish that resembled chili with the rice mixed in. I used:
- 1 onion
- 4 large cloves of garlic
- a handfull of carrots
- a handfull of green beans
- the remainder of the can of corn I opened yesterday
- about a cup to a cup and a half of kidney beans
- 500 grams of tomato sauce
- about 3 cups of cooked rice (I used leftovers)
- about half a tablespoon of paprika powder
- about a teaspoon of black pepper
- about half a tablespoon of oregano
- about a teaspoon (maybe a little bit more) of cumin
- about a tablespoon of sriracha (I really need to learn to measure things)
- about half a teaspoon of salt
- a splash of soy sauce
What I did:
I first cut the veggies in small pieces and pressed the garlic. Then sautéed the onions and the garlic. Then added the fresh veggies (which you can substitute with any frozen veggies you like or whatever leftover veggies you have in your fridge), fried it a bit more, then the corn and beans, gave it another stir and added the tomato sauce. Then added the tomato sauce, the spices, sriracha, and soy sauce and a splash of water. I let it simmer for about 15 minutes and then added the rice and stirred until the rice was heated.
This was definitely the tastiest and most satisfying meal so far. I never expected I would crave vegetables so much so quickly.
